Manufacturing features
The harvest is carried out in small boxes of up to 13 kg, which prevents excessive pressure on the berries. To maintain quality and freshness, the grapes are transported in refrigerators at a temperature of about 10°C, preserving the natural aroma and acidity. After delivery, the bunches are separated from the ridges, and the berries, after crushing, are sent for cold maceration, in combination with post-fermentative maceration, this allows us to gently extract from the berries a bright aroma, rich color and complex flavor components that become the basis of our wine. Each bottle reflects the uniqueness of the terroir near Izmail, combining the purity of nature, the skill and traditions of winegrowers and winemakers. A minimalist approach to mechanical intervention is also adopted. The rich wine is aged for 12 months in oak barrels from Jim Beam Bourbon, which gives it a unique character.
